me2thumbChef’s Note: The Kasumi Titanium Blue Santoku knife is a unique, bright addition to a collector’s catalog of knives. After using this knife myself for a few weeks, it stays sharp number 1. Holy cow, this is a sharp knife! Keep in mind though, the edge isn’t titanium. The blue titanium is the outer layer of the knife. The inner layer is Japanese steel (to hold a sharp edge), titanium tends to be a softer metal.

What titanium does do for the knife, besides look and sound cool, is that it protects the integrity of the food. With stainless steel and even ceramic knives, there can be a slight flavor transfer to the food. Albeit miniscule for the most part, you don’t get that with titanium. Kasumi chose a shade of blue to the knife that is bright in light, and dark at a non-reflective angle. So they shine pretty nicely up on a magnetic knife strip, and they kind of flash as you cut or chop on a cutting board. Another nice note is that the knife handle is comfortable and cleans super easily, it doesn’t absorb any debris.

The Kasumi Blue Santoku knife, or any of the Kasumi line, are awesome utility knifes that hold a super-sharp edge. They are also no-worry, they clean easily and stay sharp a long time. In the professional kitchen or at home, they are also serve as a conversation piece. Overall, outstanding knife.
